Gluten-Free Chocolate Chip Cookies
Ingredients:
- 2 ½ cups almond flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup coconut oil (melted) or butter
- ½ cup coconut sugar or brown sugar (use half the amount if using monk fruit)
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup gluten-free chocolate chips
Instructions:
- Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together the almond flour, baking soda, and salt.
- Combine wet ingredients: In another large bowl, beat the melted coconut oil (or butter) with the coconut sugar. Add the egg and vanilla extract, and beat until smooth.
- Combine wet and dry: Gradually mix the dry ingredients into the wet ingredients, stirring until well combined. Fold in the chocolate chips.
- Form cookies: Scoop the dough onto the prepared baking sheet, forming 1-2 tablespoon-sized balls. Flatten them slightly with your hand or a spoon.
- Bake: Bake for 10-12 minutes, or until the edges are golden brown.
- Cool: Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
